Restaurent Style Spicy Tofu Avo Salad (Vegan)

Vegan recipes are underrated. I never truly found my appreciation for vegan food after watching "The Game Changers" and trying the vegan diet for 3 weeks.

It is a lot of work to be vegan and my hat goes off to those who are able to consistently keep up with it.

For those of you wondering I am not vegan but try to follow a plant-based diet.

During those three weeks, I found my love for food expanded into new ways to cook food I had never tried before. One of my favorite protein sources I now carry in my fridge at all times is tofu. Tofu can seem weird and intimidating on its own, but after eating at several restaurants and learning how good tofu can taste just with a little bit of prep, it has made tofu become a go-to protein source for me.

With that being said, today I will share one of my favorite ways of doing tofu on a summer fresh salad I love.

-SPICY TOFU AVO SALAD (VEGAN)-

1 Large Serving

SPICY TOFU - Ingredients:

1/4 Block of extra firm tofu

Corn startch

Franks hot sauce powder

Italian Seasoning

Coconut oil

SALAD - Ingredients:

2 cups spinach/kale Blend

1/2 diced Tomato

1/4 diced red onion

1/4 diced yellow bell pepper

1/8 diced cucumber

1/2 cubed avocado

ZESTY & CREAMY SALAD DRESSING RECIPE (See recipe page, leave out the yogurt)

SALAD - Directions:

  1. If not already chopped, chop up spinach kale blend into desired pieces.

  2. In a salad mixing bowl add all the following ingredients; spinach/kale blend, diced tomato, diced onion, diced bell pepper, diced cucumber, and the ZESTY & CREAMY SALAD DRESSING.

  3. Toss the salad, then add salad in desired eating bowl topping with the cubed avocado and SPICY TOFU (see below).

TOFU - Directions:

  1. Slice tofu into thin long slices lengthwise of the tofu block. Depending on the length of the tofu block slice them in half.

  2. Heat up your pan to medium heat. Spray a layer of coconut oil, on top sprinkle a thin layer franks hot sauce powder.

  3. Pour 1/2 cup of corn starch on a plate. Dip cut-up tofu coating both sides in corn starch. Then place the tofu on heated skillet.

  4. Once all tofu is coated in corn starch and on the skillet, sprinkle some more hot sauce powder over the top of the side facing up of the tofu.

  5. Cook for about 5-7 minutes on medium heat before flipping and cooking for another 3-4 minutes.

  6. Once the tofu is cooked on both sides, keep in the pan and sprinkle a good amount of Italian seasoning into the pan with the tofu and toss the tofu in the seasoning a couple of times for about 30 seconds.

  7. Removed tofu from heat and add on assembled salad.

Enjoy!
